Bio:

Paula Rimer is a co-founder and CEO of a Specialty Food Production which was launched together with her husband, Eric Shkolnik in 2006 under the brand of Crepinicafe. Both had arrived in NY as Russian immigrants in the early 1970s.

Paula and Eric were convinced that it was their mission to bring this magnificent and unique family recipe to the local people in New York first and then to America. They worked for more than two years Americanizing the Crepini, which is a fuse between the Russian blini and the French crepe. They perfected the batter making it lighter and lower in calories. They created new and exciting artisanal fillings, such as the savory Greenwich Spinach and the sweet Hazel-raisin.

They married soon after graduating from college in 1986. Eric worked as a developer of business marketing and credit risk management systems at JP Morgan Chase, while Paula pursued a career in technology development and systems infrastructure.

In 1989 after the birth of their first son, Sam, they founded Integrated Data Consulting Services, Inc.(www.idcsusa.com). IDCS became an industry leading IT services organization to the country's largest financial firms, revenues peaked at 15 million dollars in 2001 with a staff of more than one hundred IT Professionals. During this exciting time in their lives their partnership produced another son; Ari was born in 1993.

In 2002, Paula and Eric co-founded marketperform.com as Eric authored a critically acclaimed book published by McGraw Hill, titled "When Buy Means Sell".

His revolutionary idea on rating analyst recommendations earned high marks as the company and Eric were featured in national publications and media appearances, including Business Week, Investors Business Daily, Hedge World, The Journal News, CNN FN and numerous other publications.

During this exceptionally exciting time the family and the business moved from Wall Street to Westchester, NY. It was a great place to finally relax and raise their children in this beautifully idyllic setting and concentrate on long loved family traditions such as cooking, baking and entertaining.

Eric and Paula took on their new lifestyle with zeal, often recreating deep rooted family recipes. Paula's grandma was a baker and Eric's grandpa was a dry fruit and preserves farmer.

As they listened to stories of how these original recipes were formed by their grandparents, they also learned that these old recipes took on an international flair during the journey from Russia to America.

One particular food enjoyed at the family table and delighted guests from young to old, was a "blini-crepe" which Paula's mom served with great success. Her mom explained how the original Russian blini merged with the French crepe in Paris, France in 1972 while the family reunited with relatives as they awaited permission to enter the US.

Paula and Eric were convinced that it was their mission to bring this magnificent and unique family recipe to the local people in New York first and then to America.
